Due to the government ban on evening dine-in services, my dinner in Amber had been pushed back from mid-January to early May. My friend and I both took the 8-course Full Amber Experience menu. Together with amuse-bouches, bread and petits fours, there’s quite a lot of food. There’re 2 amuse -bouches including the signature raspberry foie gras lollipop. It’s 1 of my all time favourites in Amber. The foie gras was very smooth and its rich and intense flavour was balanced by the acidity of the raspberry jam. I’d have easily eaten a few more. All the dishes which followed were sublime (in term of both presentation and taste). The iconic aka uni, lobster and caviar dish was as impressive as always. Even though I’d eaten the dish many times, I still found it very delicious. I rarely eat lamb but do fancy some very good lamb from Pyrénées and Lozère once in a while. The lamb rack was from Pyrénées. The meat was very tender and succulent and cooked to perfection. The food wasn’t heavy so I wasn’t really stuffed after the meal. Although there’d been some hiccups in the booking process, the service during our meal was impeccable with exceptional attention to details. All in all, we enjoyed our evening in Amber enormously and agreed we should visit this 2-Michelin-starred restaurant again.
