The perfect balance of perfection
An unforgettable, intimate and educational experience at Aulis. From the fantastic warm welcome to the delicious and moorish dishes, Aulis surpassed our high expectations. We loved hearing about Chef Charlie and the team's inspiration behind each dish, and greatly enjoyed how well they were balanced with excellent wine pairing from some rare and unusual producers. So hard to pick a favourite as everything stood out as exceptional. Some of the most delicious and mind-blowing food I've had in ages. Aulis is breaking trends and reinventing fine-dining, and we loved every minute!

One of, if not the best dining experience I’ve ever had.
Due to the chef’s table nature with only 12 guests, a trip to Aulis is an unforgettable experience not just a meal. From the moment you step inside you are made to feel at home while realising you are somewhere quite special. The whole team introduce themselves to you and you don’t feel like you’re visiting the restaurant, you become part of it for the evening. We were so lucky to visit the day after they were awarded their Michelin star, and that star has never felt so deserved. Having been lucky enough to eat in many two and three starred restaurants, I am amazed it’s only received one! The food is not only faultless, it’s exciting. I’d never thought I’d eat an eel doughnut let alone think it’s one of the most delicious things I’ve tried. I would recommend to anyone in a heartbeat. iIt’s a luxury, but one I can’t imagine anyone regretting.
A sensation culinary experience
Fantastic gatronomical experience . Informative and delicious. An explosion of flavours: some familiar and some new but all combined inventively and theatrically. A wonderful birthday celebration; a one - off, that I would love to repeat.

Best for a high quality business dinner
Dined at Aulis last week with friends. I have previously visited Roganic in Hong Kong, so had high expectations. My thoughts - Pre Meal: Due to the chef's table format, the organisation is pretty rigid. You need exactly 12 diners, no more no fewer. And you have to pay for the food 100% upfront (£175pp). I do understand the difficulty of running a restaurant in 2023 but this raised a few eyebrows and I'm not sure many places would get away with this practice. The venue: Previous reviews have described it as a bit industrial, which I wouldn't disagree with, but I think I probably liked the styling overall. Splitting the dining experience across two areas works well. The food: We are of course talking about a very high standard of cooking and I would say what we ate ranged from excellent (the first 3 dishes), to good (the middle section), to interesting/experimental (marinated roe, cheese ice cream with truffle honey). I didn't find anything overly salty and actually thought a couple of items could've had a bit more punch. I like truffle in moderation, but saw it too often (3 dishes I think). The presentation of the food was very good, however there was one hilarious moment when the chef had to quickly prevent me from biting into a quartz pebble that formed the decoration of the Kendal mint cake desert. The white pebbles were virtually indistinguishable from the slightly greyer (cake) pebbles that sat on top. I wasn't the only person to make this mistake. It was hilarious, but only because I didn't break a tooth. Overall, I think there should be fewer courses - the more you eat the less memorable each one becomes. It also affected the flow of the evening - see below. Service/Experience: Overall it seems like a strong, cohesive team and we were well looked after. I didn't have wine, so can't really comment but I think the rest of the group enjoyed what they were served. The chefs and sommelier were knowledgeable and introduced each course with panache. Where I think the experience falls down (and this truly sounds like a first world problem) is the constant interruption to intro the food and drink - 14 or 15 items of food plus the wines. We did sign up for a chef's table experience, but in the past I've done it in a couple of small group. When you have 12 friends all dining, they want to talk to each other and the frequent enforced silences interrupted the flow of the evening. I think this could be remedied by either reducing the number of dishes or allowing couples or smaller groups to dine as part of the 12. Also, I would've preferred to see a bit more cooking in front of me and less 'assembly'. Summary: It's a high quality place for sure, but overall feels aimed at the exec/corporate hospitality market where people won't mind paying upfront because they can switch people in and out once the table is secured and those diners will be happy to engage in polite chat while they observe the theatre and get served great food and wine. I don't think it works as well for a group of good friends. Nonetheless, I had a great evening, so many thanks to the team.
An experience, not just a meal.
Enjoyable evening from start to finish. Wish we had more time to enjoy the fabulous selection of after dinner whiskey. The coffee and apple mint tea were puddled to perfection. Charlie and his team took care of us from start to finish. The pairing of soft drinks were truly amazing. Some a little thin, but all superb in flavour -excellent. We went for flight 111 of the wine pairing, these were not so impressive. Although the saki, bold red and canadian ice wine to finish were good. The food was really good, although sometimes too fussy and always very salty. Our favorite was the Cornish scallops with a gel, then a roe sauce. Thought several ingredients over used: roes and truffle. The nibbly tasters were all exquisite. We thought the beautifully heated or iced plates were different and great attention to detail. Delightful helpful team. Great evening.
Wonderful experience
What an incredible experience. The "lounge" is not comfy, but the at table experience, with the chefs and sommelier whizzing around, and chatting the whole time is not to be missed (if one can get in). Loved the conversation, and watching up close in such a lovely hybrid cooking/entertaining space. Clearly the team have been asked most questions before - nice to occasionally hear something they haven't! Some wonderful, and reasonably priced wines, brilliantly matched to the many food courses. The link to Simon Rogan is through the produce sent from the Lake District and his name above the door, but this is really the Charlie, Charles & team show.

I feel truly truly lucky to have experienced a meal here. I always knew it was going to be special given the calibre of chefs behind it, but it genuinely blew me and my friends away! The two Charlie’s & team are not only incredibly talented but are fantastic hosts. Thank you!! Simon & Oli have created something truly unique here, both in food and setting and I cannot wait to return! All the best Henry, Chris & Luke
Superb. Special meal. Special experience.
Sixteen courses, although some are just tasters, all prepared right in front of you by the small team. Accompanied by wines from an excellent sommelier. A table of 12 in an arc around the cooking area. Yes, they cater for special request e.g. pescatarian, pregnancy etc. All done with amazing calm ad at a perfect pace. We've been before (pre-covid when they catered only for 8) and it's a little more practiced but it is absolutely great!
