This review is based on an experience close to a year ago; thus, given the changes to weekly menus, it may be biased to that particular menu. However, close to $200 was spent for about 6-7 dishes and should be adequate to get an overall sampling of their culinary philosophy. I'm a Filipino and an avid cook of Southeast Asian cuisine. I wanted so much to love the meal as I want Americans to appreciate the fusion of traditional dishes with novel ingredients (honestly, traditional everyday Filipino food to the Western palate can be rather unimaginative, fatty and limited in its use of available tropical spices). Traditional Filipino food is thus in dire need of a renaissance, culling practices from our neighbors in Vietnam, Thailand and Indonesia. I do recall dishes that evening which included a squash dish, lumpia, empanadas and laing. The meal was shared with 5 other Filipinos. Our overall reaction was somewhat negative. While we appreciated the attempt at fusing flavors not traditionally seen in the Philippines, we concluded that complexity does not necessarily equate with appetizing food. The squash dish was earthy and excessively herbal, complicated with an overuse of Indian spices. The lumpia was too narrow, leading to the wrapper being the primary taste. Traditional laing (gabi/taro leaves simmered with coconut cream) was a wholly bastardized version in which the wonderful flavor imparted by generally bitter taro was lost. The empanadas were quite good and equal to any I've had in Argentina. Bottom line: based solely on this menu, I think the celebrated chef clearly appreciates the value of exploring novel flavor pairings to enhance traditional Filipino food. At times, they probably hit the mark, while other times the pairings do clash in very unpleasant ways. If I was not so averse to overpriced establishments (most Filipinos I know were unwilling to wait hours pre-pandemic for a table for their own food, while more than willing to wait that long for Japanese, Thai, French, etc. food!), I would return there for another try. I give Bad Saint 3.5/5 stars.
