I concur with other reviewers that for those who love caviar, Caviar Russe is a must have experience. This visit was our second to Caviar Russe and we ambitiously elected to try the Caviar Russe Experience pre-theatre. We initially had made a reservation for their 5 PM opening time to ensure that we would make our show. However, when I learned that the Experience tasting menu started downstairs in the bar, I telephoned the restaurant, and they moved us up to 430 PM. The bar experience started with a glass each of 2012 Dom Perignon and a traditional caviar tasting of five different caviars: gold and classic Osetra, Sevruga, and Siberian and Pacific sturgeon. It was accompanied by potato slices, latkes, blinis, toast points and pancakes as well as creme fraiche and chives, The plate looked slightly messy, as all of the spoons were overflowing with caviar (so, we're not going to complain!). My wife learned that Sevruga is not quite to her taste. Otherwise, it was a fabulous way to start, To follow in the bar were four fabulous bites: a perfect raw Pacific oyster with a nice dollop of Osetra caviar on top; a little ice cream cone filled with bluefin toro tartare and caviar; a caviar, creme fraiche and chive macaron; and finally pan seared foie gras and Osetra caviar on top of crispy rice. All four of these bites were mind-blowing and I will probably fondly recall the last three of them for the rest of my life. Once we were finished with our champagne, we opted for a bottle of 2019 grand cru Chablis, which we sipped on for the remainder of the evening. It was like drinking angels' tears. The bar atmosphere was lively, but it was still easy to talk. The service was doting and friendly and it was fun to watch the chef assemble the different courses right in front of us (a la sushi bar).We then moved upstairs to their beautiful little front dining room and had a nice table overlooking Madison Avenue. Despite the huge window, the room is largely devoid of traffic noise. The courses upstairs were also wonderful. Bread service was a small baguette and a wheat bread served with three butters : caviar, goat cheese and rosemary. There was not as much caviar flavor as we would have expected in the caviar butter. The goat cheese butter was particularly delicious. We started with two non-caviar containing dishes of sashimi grade hamachi with honeynut squash three ways followed by braised celery root covered in thin truffle slices. Both were beautiful and absolutely delicious. We were then served a soft scrambled Jidor egg with a dollop of Osetra. This is simply the best scrambled egg that I have ever had (I will now devote the remainder of my life into trying to recreate it!!). We then had a lovely tagliatelle pasta with sea urchin, horseradish and Osetra, which I thought delicious, but was not to my wife's taste. Following that was a small perfectly cooked piece of 45-day dry aged ribeye again with black truffle and a killer Bordelaise sauce. Dessert was a cannelle topped with Osetra sitting on top of a creme Anglaise, also delicious. Following that were chocolates, warm madeleines and perfect cranberry gelees (all yummy!). The service upstairs was also excellent. They paced the meal perfectly and we were on our way to the theatre in plenty of time for curtain. This experience is very expensive. But, you only live once!! If you can afford it and you love caviar, go for it! You won't be disappointed.
