Once pleasing, now patronizing
We ate here two years ago and it was really wonderful. Sadly, I think this restaurant has lost its way. The food is still great. But the feeling of the place really changed, from somewhere to enjoy a wonderful meal to a temple to gastronomy, with the chef serving as high priest. It actually felt a bit demeaning at times. The servers were very nice but the experience is not what it used to be and I would be surprised if it maintains its Michelin star. A shame, because it used to be great.

We had lunch with family, the setting is friendly and the service professional and attentive. The sophisticated cuisine is tasty and original. The quality/price ratio of the menu is correct. The only downside concerns the absence of a real children's menu (in our case 8 and 10 year olds). We were charged for an a la carte dish (one chicken per child) and one adult dessert per child moderately suited to the tastes of the little ones.

I had an excellent evening some time ago with the tasting menu. I was in the neighborhood after a morning of shopping, I let myself be tempted, attracted by the lunch menu... And there, only hiccup, I had to ask for this menu, because only the menu was available....too bad! Fortunately, I was with my daughter who understood that we were not coming for the menu, but if I had come with guests, I would have been very uncomfortable.... Mackerel rillettes to welcome guests, excellent. Scallop petals, pearly haddock for my daughter, leek, I won't go into detail, it's really worth discovering! Game pie for me, we enjoyed ourselves! And we finished with coffee and chocolate tartlets. The portions are not very large, but it is enough for a lunch. Attractive price. Perfect, efficient and relaxed service while remaining perfectly professional. I'll be back....

I found myself in Paris for work on my birthday and asked friends for special-occasion restaurant recommendations. A woman who had also been traveling solo highly recommended Le Sergent Recruteur so I booked there. In the booking I specifically asked to be seated in the darling small private alcove. (My friend sat there and recommended it as particularly pleasant for solo diners.) This request was ignored; as I was being led to a different table I asked about it and was laughed off. I assumed someone else had reserved it first. But no: I was there until after 9:30 and no one took the spot. Worse: They sat me in front of it so I had to look at it for the entire meal. The food was excellent, especially the lamb, the Paris-brest, and a surprising coriander sorbet. There were several surprise treats including an intriguing amuse-bouche and chocolate tartlets with fresh fruit, and a delicious mackerel spread for toast. The service was impeccable, with a charming, funny server. As promised by my friend, I felt I was being treated like a queen. While it may seem small, the disregard for my seating wishes was offputting. I had a lovely meal but this felt intentional and a bit petty or mean on the part of the restaurant. It's Paris and I will dine elsewhere next time.

Staying on St Louis island this place was 50 metres from my hotel. What a superb restaurant. Modern, understated but highly professional. I had a five course lunch with matched wines for 180โฌ and frankly it was a bargain for food of that standard.

The chef had toooo much sugar in the dishes even the starter and the main. All in all a very bad experience both on the food and the wine. All except one dish was loaded with sugar, and when telling the staff they did not take any action. The wine was not presented before opened, and the champagne was not presented with a taste before poured - one of the glasses basically being without any bubbles. The chef clearly not interested as he was standing almost just besides us in the kitchen.

A great culinary art that positions us on a cloud of intense happiness throughout the dinner. I am very surprised by the comment below, because my husband and I are great gourmets and very demanding. The service was impeccable, the pace was perfect, with great kindness and professionalism. The wines offered were out of the ordinary for a discerning palate. The Alba truffle dish was ecstasy. I loved the rosebud flower infusion to accompany my dessert with its incomparable flavors. Thank you to the entire Sergeant team for this unforgettable moment. Long live Alain Pegouret!

Stunning restaurant in the most beautiful quarter of Paris. Interesting, creative dishes with sublime service. Get the life-changing spritz Aperol and the duck-mango foie gras. Youโll be in gustatory heaven! Also, be sure to check out the after-dinner cognac service which features an oversized bottle and an enormous eye-dropper!

Our hotel recommended this restaurant and after reading the reviews decided to try it. We were not disappointed. The restaurant is small but the tables are generously spaced. Noise volume was very low allowing for intimate conversation. The service was outstanding throughout the evening. You can order ร la carte but we chose the tasting menu with wine pairing. This is a five course menu consisting of an appetizer, amuse bouche, starter, fish, meat and then dessert. (marinated scallops, Kristal caviar, roasted poultry, chocolatea pear were all excellent) This was a most enjoyable experience and we look forward to our next visit.

We came for a family 35 anniverssary dinner and we had a trully memorable evening.
Lucky us, we got a table right by the kitchen, separated by a glass, so we could see the Chef, Alain Pegouret, running the kitchen team, touching and supervising every dish. Every team member knew very well its part. It looks to us a very syncronised team,as an orchestra.
The menu had a good variety, so each one could make a very pleasant choice.
All the dishes had an excellent taste, surprising many times with different ingredients and cooking technics.
We had very good wines to complete the meals.
Between our ordered dishes we received a lot of surprises ''from the house''.
One positive mention for service : very polite, explaining every dish, trying to make our evening very nice.
For sure, we'd like to return next time we visit Paris.
Good Experience
Let me start this way: one Michelin star raises the expectations to a menu. However, these expectations were not met. We had a nice evening and all dishes went well, but we had no exceptional experience compared to another restaurant we visited the day before and which truly deserves a Michelin star.
We went for the menu that evening. As a starter we go a Tuna based appetizer, which was good. Also the Amuse Bouche was really nice and the first starter of marinated scallops was great. The way it was presented shows the kitchen and the skills of its Chef. Also the combination of spices and herbs was really delicious. I had a good feeling. The next dish was the first issue: a polenta with an egg yolk. Despite of the fact, that polenta is not a dish which requires high cooking skills, it was also qualified to fill the belly quite well. Taking into consideration that the price of this dish as separate starter is very high, we could not understand why this should be the case. Most probably simply due to the fact that the Truffle topping on the Polenta is expensive. The main course was black garlic skin-stuffed chicken. Here I got the impression that chicken should not be part of a menu in a high cuisine simply due to the fact that this kind of meat can be done at home, too. I expect lamb, Wagyu beef, pigeon, veal - anything except chicken. Hence, it was not our favorite dish. A sorbet as a pre-dessert was followed by the main dessert. There was also a sorbet part of it (a different one). Here I would have expected some more diversification. Conclusion: all dishes were good but not exceptional. More finesse could be in there.
The staff was absolutely friendly and helpful, always attentive. The location is pretty nice, nice ambiance. Slightly turbulent when the staff had its peak in serving all tables since they needed to run up and down. The seating is "French", means close table by table. You can be lucky if you speak a different language so no one will understand you. Give it a try.
Not Michelin class
I'm extremely surprised by the very many praisings of this restaurant here on TA.
Is this an "The emperor's new clothes" effect?
My lack of praise is based on several things - smaller and bigger. And the price/performance is certainly a factor weighing in.
For a one star the prices for a la carte is mostly fair; however the starters are a bit high (from 37 and up). The main dishes ok in price with two exceptions: the turbot and the ris de veau topping 72 and 58 EUR. That's a lot of money for a dish and suggests "great expectations" in a price region where one usually find two star establishments.
The staff is kind, eager and young. And lecturing a learned rhyme, but their responses are non existent or disconcerted for "unprepared" questions - there gives no space to more intricate queries like the origin of the ingredients etc.
So, a bit unexperienced while they try to sound very experienced...
As dinner time peaks the eagerness of the staff turns into stress. They run around and the relaxed and somewhat dignified feeling you expect at an establishment of this kind is totally missing. They appear by the table for taking away plates which is not finished (main blunder) but are unattentive to fill up the glasses with the wine bottle that you're not permitted to have at your table.
If the wine is not set AT the table, very much attention must be payed for refilling. Else, you should not have this type of order.
Furthermore, we had a rather expensive bottle of white and the sommelier put it aside without a cooler! There it stood for twenty minutes and I had to ask him to fetch a cooler. It appeared ten minutes later (when the bottle was half full).
Nah... with a Michelin star on the front door this is quite appalling!
Now then, the food:
We chose from the carte and we chose the above mentioned high priced main dishes - just to challenge our really high expectations.
As starters we tried the fried fois gras and the crab dish (torteau).
The fois gras was fine, but not exceptional.
The crab was spectacularly presented and had interesting fireish flavour combinations, but actually the crab (or the lobster jelly, or both) "tasted fish" (in the lesser good sense), which it really should not do.
The 72 EUR turbot: good, but nothing exceptional justifying the price. The "nage iodรฉe" was very hard to identify along with all the other ingredients.
The 58 EUR ris de veau: not good enough. Too many flavours competing on attention, A lot of sauces and paste of various kinds took the attention away from each other. Lack of firmer textures made the whole dish a more or less mushy experience.
This was also eminent in the mysterious "amuse" presented at the beginning of the meal. The list of ingredients read by the waiter was so long that not even a third could be remembered.
It turned out to be a chaos of tastes and mushiness.
It seems that the kitchen really doesn't know what the aim is. There is no concentration or clearness in what type of flavour they are searching for.
Obviously there is no trust in that the fine main ingredients can speak for themselves. Or at least with a carefully chosen selection of accompanying accessories...
After all this we had totally lost interest in having a dessert, so we bid farewell.
Le Sergent do have ambition, do use fine ingredients and do have obvious skill in the kitchen. But the setbacks mentioned above in combination with the occasionally upscaled pricing cannot lead to a top ranking from my point of view.
"Much ado about nothing" is unfair to say. But "much ado about very little" is unfortunately true...
