Unchanged for a hundred years. Wonderful in every respect
A very special time capsule, apparently unchanged for a hundred years. As our first class immaculately presented waiters brought us perhaps the best Italian food ever, a T-Bone on the same scale of the statue of David I was detracted by the quiet always hard working grey haired proprietor on the front counter. As we left I chatted to him, he followed his father whoโd been there for 51 years. He then added that his partner was 3rd generation founder in 1933. SO SPECIAL - unforgettable.
Be the first to ReplyButter Chicken is the Best
There is nothing more that I can say about the Butter Chicken other than do not miss it. It was fantastic. You may be seated at a table for 6 with others. At first this was a turn off, but we met nice people whose visit was their first time to Italy, and gave them recommendations from our many visits over 50 years. We even bumped into one of them in Rome at one of our favorite places.
Be the first to ReplyBest evening out in Florence.
My sister recommended this restaurant to us. I suggest that whatever you do, make a reservation. It opens at 7.30pm, we were in promptly and within ten minutes it was full. Whatever you do, order the butter chicken. Perfection. I also thought that their zucchini fritti were the best I have ever had. Service is efficient and friendly. Perhaps the greatest compliment that I can pay them, apart from the fact that we had a marvellous evening, is that when we got up to leave we said good bye to three tables around us. Stunning atmosphere and cannot praise it highly enough

After reading all the great reviews we just had to come during our brief visit to Florence. Since they don't take reservations on line, we asked our hotel to make reservations for us. We came in at 7:30 PM and were promptly and warmly greeted. We had the steak and buttered chicken, which was to die for. It is in a small valley. Google had trouble pinpoint it and tried to send us another trattoria up the street.
Be the first to ReplyGo for the chicken - seriously
Fantastic local spot. Great atmosphere (locals out to eat together who were very friendly to tourists). Saw photos of many famous previous diners About 3 different people told my wife (then fiancee) and myself to get the chicken, which on its face did not sound that interesting. It was perhaps the best chicken I've ever had. I still think about this dish years later. Wild strawberries and raspberries with lemon and sugar were also great. Considered gatekeeping this but it is too good not to share
Be the first to ReplyGood food and good value
The service was first class and the menu had many good choices. Booking is essential as the restaurant is not large. The food chosen was excellent
Be the first to ReplyGet Dessert!
I walked in with my husband, nervous since we didnโt have a reservation, and found out they were booked up to a week in advance! Lucky us, they had a table of three not show up, so on the spot we were fortunate enough to get seated. This is a Trattoria, please remember, so seating is minimal and the area is small, but the charm is endless and the food even better. Our server was charismatic and wonderful, helpful in speaking English with us despite our broken attempts at Italian. We were in close proximity to our table partners, but even they were lovely and social, and they even encouraged me to try the dessert (please get their cake with seasonal berries, it will highlight your week!). Our food was incredibly delicious, and while we didnโt have any wine (shame on me for drinking a bit too much the night before) I saw many enjoying it with a merry atmosphere. The food could have its own paragraph, but Iโve spent weeks here in Italy eating all over, and I was still blown away by how incredible the food was! Well worth the price, and surely the wait if you come here. I recommend a reservation, and of course showing up on time (or youโll make someone lucky like we were).
Be the first to ReplyA six table restaurant in Florence... simply fabulous
A friend recommended this six table (!) restaurant to us and we're so glad we followed up on her suggestion. Reservations clearly required... and smaller parties may share a table. The four of us had another couple at the far end of the table... far enough away that both of us had privacy but close enought o chat if we wished. The staff is very friendly, profficient in English and know just how to manage a full restaurant placing stress on their small kitchen all at once. They basically have two seating a night..7:30 and 9:00 pm... and have relatively limited menu.. a few pastas, salads and entrees so the staff can submit each course en-masse to the kitchen. We didn't know this but you can bring your own wine..their selection is Chianti. period. We had the Florentine steaks and pasta with meat sauce selections with some different slalds/apps. All were VERY good. The meringue desert is to die for!! strongly recommended by our waiter and we were so glad. Try this hidden gem.. but reserve early and consider bringing your own wine.
Be the first to ReplyGreat food service and wine
Great food and service at great prices. We were made to feel at home with some of the best food (Florentine steak, butter chicken, spinach and even the mixed salad) were excellent. The wine list is the best priced and fantastic.
Be the first to ReplyThe best!
Oh my goodness. One of the best at great prices. Love the smaller restaurant feel. The waitersโฆ.amazing. Alessandro was SO welcoming. The steak was so tasty and bigger than youโd see in the USA unless you paid handsomely for it. If you can get a reservation, take it! Even our local tour guide today knew how wonderful and authentic this restaurant is.
Be the first to ReplyLunch
We were recommended this restaurant by endless trip advisor reviews so made a reservation. I know Florence well and lived here for a while. It was hugely disappointing. We had a tasteless lunch and literally could not understand the hype. We could have had a much better lunch if weโd cooked it in our air b and b. There are So so many better places to go. It prides itself on being honest Tuscan cooking, but it is basic.

Excellent Restaurant (small) . Historic plates very well made . Try the artichoke Tortina and the Buttered Chicken . Meat of course is excellent . Very good service . Massimiliano the owner is very pleasant and available to tell you the restaurant history that starts in the 1860. Highly recommended for the food and the service.
Be the first to ReplyCharming, rustic and authentic trattoria with delicious food.
We situated ourselves at the back right corner and had a fantastic view of the kitchen and the chefs at work, with the theatrics of ginormous, Florentine steaks being flame grilled and chicken sizzling in abundant butter. The food did not disappoint and we enjoyed delicious tortellini in brodo, the chicken in butter and the meringue with berries. You could clearly taste that the chefs use Hugh quality ingredients. We enjoyed the warm, friendly and accommodating service and the cosy atmosphere. Wonderful, memorable experience.
Be the first to ReplyAuthentic!
Very unprepossessing from the outside but a very warm welcome, a traditional, cosy interior, friendly and efficient service, and a tiny kitchen producing delicious, largely meat based dishes.
Be the first to ReplyWet pizza
I ordered pizza here and it was very wet and had a terrible taste, we al didnt finished oure meal and they didnโt even ask why. The worst place ever
Be the first to ReplyEnjoyable
Is it a traditional trattoria or a clever marketing plot masquerading as one? It actually does not matter as the food is good, table wine decent and service kind & effective. As lovely as Florence is, the centre is overridden by tourists and subpar food joints. Sostanza was a nice reprieve from a seemingly long list of average restaurants.
Be the first to ReplyA super rushed environment at Sostanza. Itโs not a pleasant feeling at the end of it
I seldom write a review about restaurants. I am more of a reader than a reviewer. But after much thinking I believe it is important for me to share this. My wife and I had dinner at Sostanza tonight. The outstanding menu was the artichokes pie or Tortino di Carciofi. The butter chicken was good but the Fiorentine Steak was just ok. Itโs not so much the food but the โrushedโ atmosphere that we are feeling. From the get go, ordering, food arriving, wine ordering, plates change, desserts ordering, one will sense a feeling that we are being rushed. Next seating was at 9:30 pm and at 9 the bill showed up and they are telling us that they are preparing for the next seating when no one is waiting. We feel that we are like cattle being herded for a certain gain. They shook our hands at the cashier and our waiter even tried to kiss my wifeโs hand, but we feel that itโs all a charade to let us forget the rushed or what I would call the โcattleโ experience. At our 7:30 seating itโs all tourists, Americans mostly. This place need to learn that tourists are not insensitive to being eat-fast-pay-get-going. The lack of locals at this place might be an indication that the locals has had enough of this rushed environment and only tourists who visits once in a blue moon gets in. What dawned on me is that other restaurants have a lively atmosphere going well into the night where patrons and owners are both happy. I can sensed that only the owners are happy at this joint. Oh, another think, they only take cash. No credit cards. Donโt understand why thatโs the case.
Be the first to ReplyTOURIST TRAP!!!!!!!!!
Good marketing but overpriced, tasteless food, served to trick tourists. After living in Florence for a year, I was thinking it impossible to find a trattoria with bad food until I tried the "famous" Sostanza. Small portions, the butter chicken that everyone is ordering is just a super expensive chicken breast we can eat at home, the bistecca fiorentina is not the "real" one, the carcioffi tarte was basically an omelette. Florence has MILLIONS nice, local trattorias, don't fall for the marketing and the "famous"people that visited Sostanza. They did not know any better.

We had a reservation, and, on arrival, speaking a little Italian went a LONG way! Sat at a communal table with a mother and daughter. Prosciutto, Tortellini al Brodo, Pollo Beurre, Fagiole al Olio, and Frangoline al Vinoโฆ. Come on!!! That Butter Chicken is a game changer. At the end of the meal, the waiter and I almost exchanged the two kisses on the cheek. A MUST in Firenze!
Be the first to ReplyBest trattoria!
We visit 3 years ago with a group of friends and this is how Florence should be experienced. No none-sense restaurant with very friendly and attentive staff. Steak is amazing, as well as the contort but that ButterChicken is a must try and for dessert the meringa with fresh, seasonal fruits. Out experience here is one of the most unforgettable one. I will definitely visit again and highly recommended. Reservation is a must.
Be the first to ReplyGood, not great
We had lunch here today based on a friends recommendation and the reviews here. All the reviews rave and rant over the Butter Chicken so we all three had it. For sides we ordered Sauteed Spinach and a Lettuce Salad. The girls shared a cake desert.
The Chicken was good but not great. The Spinach was very good and the Cake was great.
Service was good not great.
Please never change
Thankfully, suspended in time. Everything humble, friendly and just so. Smiling service. Two words: butter chicken!
Be the first to ReplySo good we went back again
The menu is short and simple - the food was all fantastic. Great quality with no fuss. Excellent service. They were not open at the weekends when we were there in February. Booking is essential as they are very popular.

Went twice and both experiences were delicious ๐ the chicken cooked in butter is amazing. Canโt wait to come again on the next visit.
Be the first to ReplyFavorite meal in Florence and best chicken I've ever had.
Get the chicken breast in butter. Okay, just wanted to make sure that was mentioned first. And now for the whole experience.
I had been told by multiple friends and our travel agent that we needed to go here so it was really hyped up and we had been let down already... Trattoria Sostanza did not let us down. My husband and I arrived for our 7:30 reservation and were seated quickly while the whole restaurant (a small and cozy space) filled up. We got a small carafe of the house red wine and the artichoke pie to start on our server's recommendation. It was unique and eggy and tasty! For our mains I ordered the butter chicken (based on recommendations from friends and reviews on this site) and my husband had the Florentine beef steak which we could see them butchering in the back. I also got a side of the tortellini in broth since I needed some pasta and that was delicious. My husband loved his rare steak and when I tell you this chicken is the best chicken I've had in my 30 years, I'm serious. It's magic. I pretty much never order chicken at a restaurant since it's just so blah and I can make a blah meal of chicken at home, but this is out of this world. Covered in butter, yes, but so perfectly cooked. Get it. For dessert we had the meringue, another recommendation from our server and it was served with raspberries and was truly delightful, especially paired with their vin santo.
It is cash only and we were drunk on butter and wine and are fairly certain we left too much, but it was worth it.
