This looks like a modest neighborhood restaurant from the outside, but there's far more going to it than meets the eye. This is actually a longstanding Michelin-starred establishment that has survived the economic disruption of the coronacrisis and is back in operation to a full crowd of indoor diners. Which means reservations are a must.Michelin-starred omakase establishments are a dime a dozen in the West Bay these days, but Wako remains modest, unpretentious, and surprisingly affordable. The flagship "sushi tasting" cost only $86 when I stopped by in the fall and featured 10 pieces of nigiri plus assorted small bites, while there was also an a la carte menu full of raw and hot dishes, none of which cost more than $25.As with any sushi restaurant, the action is at the sushi bar where you can marvel at the chefs' technique and the glowing freshness of the seafood they're working with. Especially dazzling was a box of fresh uni.Once you've settled down for the omakase, you'll be treated to an amuse bouche - in my case, steamed daikon with brussel sprouts. Next came a procession of ultra-fresh nigiri, whether tai (red snapper), sea kelp marinated halbut, Miyagi scallop, shima aji, sanma (pike mackerel), and wild yellowtail. Then came a bowl of horse hair crab with salmon roe, an uni hand roll, and then serving of bluefin tuna marinated in a jalapeno seasoning for 2 months (don't worry, it was spicy at first, but it wasn't overwhelming and it faded off). To cap things off were two fried dishes: bluefin tuna katsu and hotate kakiage (deep fried fresh Hokkaido scallop with mixed vegetables, shishito pepper, and matcha salt). To round things out, I added a dish of dessert truffles which turned out to be Royce chocolates.An exceptional value and procession of tastes and textures for the price. Service was restrained and efficient but very explanatory when needed. All in all, a very intimate experience - whether at the sushi bar or one of their small tables (most for 2, some for 4). And a great way to mark my 8400th Yelp review!
