Simply put, one of the top 5 meals I’ve ever had at a restaurant. It’s a spot off the beaten path of the strip, but worth the 5-10 minute drive through Chinatown to get to. A small, intimate atmosphere decorated in dark and warm colors, light music and moderately upscale fixtures. I went in early on a Friday night, around 5:15 p.m., with a reservation and it wasn’t hard getting in, but was filled up by the time I finished. The food can only be described as exquisite. It’s Spanish tapas style and I was alone and got four dishes (including a dessert). They offer a massive but fairly priced tasting menu but I went a la carte - and please note, I did not try any of the wine or other alcoholic offerings but people at the table next to me were raving about the sangria. I started off with the pan con tomate, which consisted of warmly toasted Catalan Olive Oil Bread, fresh tomato, and olive oil. I’m not much of a raw tomato fan but the balance of the dish made it incredibly delicious even for the non-tomato lover. Next I had what I can only describe as a top 5 dish I’ve ever had - the braves potatoes. Expertly described by my server, these crunchy delights consist of nearly a dozen layers of incredibly thinly sliced potatoes, stuck together, baked and then friend into sticks around 7” in length. The serving comes with four sticks and comes with a Brava sauce that steals the show and should be bottled and sold. Every bite was crispy on the outside and just the right about of softness inside, with a perfect amount of salt to not overwhelm the pallet. Simply perfect. For a main course I went with the plume Iberia. This dish is based with tender sliced pieces of choice pork, then littered with more braves potatoes, garlic chips and Campari tomato confit. The dish looked and tasted like a 9.5, but the smells coming off of it were a 10. A good sized portion as well. I finished this epic meal off with a dessert of chocolate cremoso - basically a chocolate ganache sprinkled with sea salt, dried with olive oil and served with some crostinis to spread on like butter on bread. It was small but rich and tasty. Overall, I can’t say enough good things. The service was impeccable - there were no less than three servers/chefs/owners who came to the table at one point or another to check on me and each of the dishes was comprehensively described by the server when delivered to the table. The price of the meal with tax and tip was around $100 - as stated before I did not have any alcohol but I also got four filling dishes. There may be bigger and more famous Spanish restaurants in Las Vegas, but I guarantee you, none can top Edo Gastro Tapas and Wine. I already can’t wait to try it again on my next visit to Sin City. 5/5.
