The quintescence!!
The Wow effect from start to finish!! Michelin should expand its range to 4 stars, just for the Auberge du Vieux Puits. French catering at its most noble; discreet, friendly, professional service and good advice. The plate is a work of art with each dish, from the tomato as an appetizer to the seasonal dessert through the fish cooked in beeswax, an eye-full, a palate-full treat, all enhanced by a game lights above the tables. A special mention should be made to the choice of foods, all or almost all from the nearby region, Corbières, and its surroundings, which adds to the excellence of the menu! Little wink to the chef: I have no doubt that you will make good use of Melfor vinegar :)

When you go to the best chef in the world, you logically expect something exceptional and therefore potentially be a little disappointed. Well no: the cuisine is simply extraordinary, both in terms of quality and creativity, and it is a marvel from the beginning to the end of the meal. And what's more, the atmosphere reflects the chef, present throughout the meal (which is becoming extremely rare among all starred restaurants), warm, smiling and friendly, far from the congestion of certain prestigious places. And all this makes for a moment of pure, timeless happiness, tasting with your eyes and taste buds a work of culinary art in a friendly environment....
Exceptional
One of the most unique and exciting tables I have ever created. A high-end, twirling cuisine, an unparalleled sense of staging (small spotlights illuminate the dishes brought to you at the table), prodigious audacity (watch out for the candles...), and an absolute balance of flavors , textures and harmony. An absolutely major table, which features in my most memorable experiences. The service is very good, although a little theatrical at times. A hint of naturalness and relaxation would be welcome, but for all that the quality of service is impeccable. A particularly pleasant atmosphere emanates from this beautiful place, resolutely family-friendly.

Very rare
From the start of booking, to arrival, to care until departure, we were received like royalty. The place, the quality of the staff, the food... Gilles Goujon, a display of his qualities: subtle inventiveness, precision in the combination of flavors, without forgetting an impeccable choice of products. Everything is done to make you feel good . caring, kind and very professional. We claim that it is the best time of our life with Emmanuel Renaud and that we have rarely seen a place of such quality! You fully deserve your stars!
Perfection
Not my first visit. I accompanied a friend who wanted to experience fine dining. Giles Goujon did not disappoint. The excitement on my friend’s face whilst experiencing the magic of M. Goujon was worth every centime…and it will cost many centimes but perfection does not come cheap. To describe the meal here or take photographs would spoil the surprise for others who may dine at the Vieux Puits for the first time. My first visit was in 2003 and all I can say is it just gets better and better and the surprises keep coming, Bravo M. Goujon and your outstanding team.
An exceptional moment far from the hustle and bustle of everyday life
Second time we have come to this establishment. We took the “air de fête en corbières” menu. The first appetizer was both fine and explosive with flavors, and served as a herald of the colorful sequel. At the table, every step was truly fantastic. With each dish, a discovery and an emotion. The plates were full of contrasts, both in tastes and textures. The cooking was perfect, especially the incredible sole cooked in hot beeswax. We will not forget the sacrosanct “rotten egg with truffle” and the dessert prepared by the son. The culinary walk was exceptional. We were truly transported. Also note the attentive staff who do not fall into the category of "too much", on the contrary! Thanks to the chef for coming to exchange a few words with us (go Narbonne). See you soon.

A chef, a team, exceptional cuisine
Accustomed to three-star chefs, we had dreamed of encountering the cuisine of Gilles Goujon and it was with great impatience that we awaited this moment. And the pleasure lived up to our expectations. Our “party air in Corbières” menu was indeed a celebration for all the senses! And what about the chef’s “surprise” on our plate! (Thank you again Monsieur Goujon for this exceptional dish that the blonde in me will manage to keep confidential!😜) Special mention also to the sommelier whose menu gives pride of place to local wines (very good indeed!) and therefore at reasonable prices, which is no longer the case for most major addresses. We like to think that the price paid in a restaurant of this quality rewards the exceptional talent and work of a chef, and a little less the guarding of a bottle of a distant grand cru in a cellar other than ours. Perfection of each dish, a top team, an attentive and accessible chef, the 3 stars are hung at the highest!!
My 35th birthday 😎
Living up to what I expect from a gourmet, my birthday celebrated there with friends leaving Narbonne that day a few minutes of driving were enough for us, quite surprising in this village hidden in the Corbières to find this restaurant...follow me ;) Old stone house and yes, that’s it, we are there A welcome 💁 ♀️ and perfect service, the cuisine, the taste 👅 perfect food and wine pairings too; Aperitif in the small lounge at the entrance and then invited to start at the table. There you have to cross the room It was one of my first 🥇 stars I was quite stressed but in the end it was great it went very well, the server was great 👍🏻 Do we present it more? if still not the waiter but: the Rotten Egg of course is the signature of Gilles Goujon his signature! Very original and above all everything comes down to the presentation then lots of other dishes and very good desserts. I also really appreciated the (cart) cheese platter, it's a crescendo parade of flavors and it's above all a good memory for the taste buds and in my head, the chef himself Gilles Goujon came to greet our friendly table and pleasant he even played the photo game for my 35th birthday and well I say successful birthday Thank you ☺️
The Pope of Gastronomy
We spent 2 magical evenings. Everything is absolutely incredible. Very professional, attentive, very cool staff. Very friendly atmosphere, they know how to put you at ease. The setting is very beautiful. And the cuisine of Mr. Goujon and his brigade? Simply EXCEPTIONAL. Of the 3 macaroons, this restaurant remains the first of those we did, for us. Real, local, tasty, surprising, joyful cuisine... Mr. Goujon has once again brought us the happiness that we hope to experience in this style of restaurant. Incredible work is done so that even people with gluten intolerance experience the same thing as others: respect. All the dishes were amazing, a big thank you to the whole team!
